Italian truffles are almost the best in the world and the international auctions (a real defy among the most famous restaurants in the world) are a real experience.

Truffles can be white and black; the difference is quite clear not only in the external color but also in the smell and taste. The white one is also the most precious. Produce in the Northern Italy (Piedmont) they are very similar to mushrooms just because they use the same growing conditions: deep woods of oaks, humidity and a little warm, some water and finally a couple of nice dogs that discover them.
